 Grilled Chicken with Peach Salsa

I am very fortunate to be in the Texas Hill Country right now, home to some of the best peaches this side of the Mississippi.  I just got several bushels of peaches from Mountain Home picked that morning by campers from Camp Stewart.  These are wonderful ripe juicy peaches that are great by themselves or as a special treat in or on homemade ice cream.  They can also add a great touch of sweetness to a savory dish such as grilled chicken with a peach salsa.  The combination of the sweetness of the peaches and the mild heat from some jalapeno peppers is delightful. It also goes wonderfully with our Martin Ulisse Rose.  If you like your salsa a little hotter, feel free to add another jalapeno.  If you don’t like any heat to your salsa, leave out the jalapenos altogether.  The recipe will make more salsa than you probably want to put on your chicken, but chances are you will have already eaten half of it by the time the chicken is done. 
 
Ingredients:
5 ripe peaches, diced
½ cup diced red onion
½ cup diced tomato
½ cup diced green pepper
½ cup diced red pepper
1 jalapeno, seeded and diced
Salt and pepper to taste
4 chicken breasts
½ cup olive oil
2 cloves garlic, crushed
Salt and pepper to taste
 
Method:
Mix the peaches, onion, tomato, and peppers.  Season with salt and pepper to taste.
Marinate the chicken breasts for 30 minutes in the olive oil, garlic, and salt and pepper.
Grill the chicken until done.  Top with the peach salsa and mangia, mangia!
