 Spinach Ravioli

Normally making ravioli from scratch, while not extraordinarily difficult, is a daunting task for those who haven’t done it.  This recipe has a filling made from scratch but uses wonton wrappers for the dough.  This is a handy shortcut that makes this a quick, easy and delicious recipe.  It goes great with Mocavero Sire Negroamaro.  This is a sure fire way to impress your family or guests with a great dish and a great wine.
 
Ingredients:
32 wonton wrappers
1 bag frozen chopped spinach
1 cup shredded mozzarella cheese
¼ cup grated parmesan cheese
¼ cup ricotta cheese
2 eggs beaten
1 jar marinara sauce, or about 4 cups homemade marinara
 
Method:
Defrost the spinach and squeeze all of the water out.  If you want to use fresh spinach, cook it in a little bit of olive oil and then drain well.
Combine the spinach with the cheeses and mix well.
Lay out 6 wonton wrappers.
Place about a tablespoon of filling in the middle of the wrapper.  Brush the edges with the beaten egg.  Lay a second wonton wrapper over the first and seal the edges.  Repeat until you have 16 raviolis.
Drop the ravioli in a pot of boiling water for 2-3 minutes.
Serve with heated marinara sauce and mangia, mangia!
