 Pesce al Cartoccio

This is a classic preparation for fish in a bag.  The French call it en pappilote but whatever you call it, call it delicious! 

 

Ingredients:

2 TBS olive oil

2 cups fresh spinach

2 – 3 ounce filets of fish

1 clove garlic, chopped

2 TBS chopped shallots

½ tsp thyme

8-10 asparagus spears

½ cups cherry tomatoes, halved

6 artichoke hearts

1 TBS chopped Italian parsley

3 lemon slices

Juice of 1 lemon

½ cup white wine

2 TBS butter

Salt and pepper to taste

 

Preheat oven to 350*.

Lay a piece of foil on a baking sheet and put the olive oil on the foil.

Layer all ingredients on the foil in the order they are listed.

Tightly seal the foil and bake for 15 minutes.

Serve in the foil and mangia, mangia!
